Wild Rice Salad

I had so much hoped that fall would come with all it's glory of chilly weather, rain and colorful leaves. It has been a loong, hot, dry summer - unusual for the Pacific NW.  

However today's temperature reached a level of uncomfortable heat and making this family miserable. So I wanted to have something light & refreshing for dinner, but the usual salads of the summer had grown boring. 

Wild Rice - Watercress - Sweet peppers (I should have roasted an peeled these, but I was running out of time) - shredded carrot - a leek - cucumber - and chickpeas. Dressing was most simple of salt, pepper, red wine vinegar and EVOO.   Kiddo & I enjoyed it.
