Kale.
So abundant this time of year. So many ways to prepare it. My favorite way is a this simple Kale saute, the original recipe I found in my "Greens, Glorious Greens" cookbook by Johnna Albi.
You will need:
a bunch of Kale
onion
garlic
celery sticks
red pepper (bell pepper or pimento, jelapeno)
lemon juice
sea salt
Check Kale for bugs, de-stalk & coarsely chop. Rinse under cold water, but leave wet.
Saute thinly sliced onion for 5-7 mins, add garlic til aroma fills the air. Add sliced celery & pepper & saute about 5 mins, then add wet Kale, cover and let steam til Kale is just wilted and pepper still has a bite. Just before serving sprinkle lemon juice & sea salt over.
This is an excellent side dish with Salmon or Pork and Mash.
