
Not so with dinner the other night. I had some fresh chorizo I wanted to use up. After searching the cupboards and fridge, I found no eggs, but potatoes & some veggies.

I diced and sliced some poblano and red pepper with an onion and sauteed this in a separate pan, while in my big cast-iron skillet I fried tiny dices of potatoes. To the latter I added the chorizo and browed it. Then I mixed it all together and tossed it in a bowl. Could've been topped with some shaves of cheese, but I forgot - it was too tastey.
